Description: Originating in Central Asia, ginger has been consumed as both a fresh vegetable and a dried spice for thousands of years. Ginger has found its way into many local cuisines and is prepared in a variety of ways; it is eaten raw in Southeastern Asia, boiled or fried in China, and pickled in Japan.

Ginger is cultivated all over tropic and sub tropic Asia. India harvests fifty percent of the world's ginger, while African and Latin American countries including Brazil are the other major producers. Fresh or cooked ginger is considered internationally an excellent seasoning or appetizer.
